Tomato & Aubergine Dip

1 peeled chopped aubergine, 4 chopped tomatoes, 1 chopped onion, 4 cloves of garlic, handful of parsley, 1 tbsp chilli powder, 1 tbsp cumin seeds, 1 tbsp ground coriander, salt, olive oil and water. Place all in a pot and cook for 30 min, stirring a couple times. Then add some lemon juice and a tbsp of tomato paste, cook for a further 5-10 min. Enjoy!
